This morning, not knowing that tomorrow is National Chili Day, I put dried beans on to hydrate so that I could make chili tomorrow. The recipe that I will use is -

1 1/2 tablespoons Olive Oil
4 cloves Garlic minced (roughly 2 tsp)
1 medium Onion, finely chopped (about a cup)
1 Green Bell Pepper, diced (about 1/2 cup)

1-2 pounds Ground Meat (80 - 85% lean)- beef or turkey - browned & crumbled
1 Taco Seasoning packet (I usually use Chi Chi's medium heat or low sodium Old El Paso)
3 cups Beef Broth (3 hydrated Beef Boullion cube)
1 small can (6 oz) of Tomato Paste
1 jar (16 oz) of Pace Picante Sauce (you may substitute Salsa)
1 can Rotel Diced Tomatoes & Green Chilies
1 can Refried Beans
1 can (15 oz)Chili Beans in Spicy (Chili) Sauce
2 cans of Chili Beans OR hydrated 16oz bag, your choice, of Dried Beans (I use 16 bean variety)

Garnish (optional)
1 bunch green onions, thinly chopped
1 cup sour cream
1 cup shredded Mexican Cheese Blend or shredded Cheddar Cheese
1 bag of Tortilla Chips, crumbled

1. In medium skillet saute Garlic and Green Pepper in Olive Oil until Pepper is no longer crisp.

2. Add Onion to skillet. Continue sauting until Onion is translucent.

3. While the sauting is occurring, over medium to medium-high heat, in a large pot combine crumbled Ground Meat, Taco Seasoning, 2 cup Beef Broth, Tomato Paste, Picante Sauce, Tomatoes & Green Chilies, Refried Beans and other Beans. Bring to a fairly rapid boil then reduce heat

4. Once completed sauting, combine Garlic, Green Pepper and Onion into pot. Cook for 1 1/2 hour at a light boil, allowing all flavors to integrate. Use reserved cup of broth to thin, if necessary. Stir throughout time on stove -- being sure it is not allowed to burn

Chicken Chili

1-2 lbs of cooked, chopped (or pulled) chicken
3 (15 oz)cans of various beans (whatever is on sale)
2 (28 oz) cans crushed tomatoes (1 can could be the chili ready type)
1 pkg of chili seasoning
2 cloves garlic (chopped or pressed)
1/4 cup diced onions
1/4 cup diced peppers (any kind, depending on how hot you want your chili)

Throw it all in a crock pot & cook on low all day. Serve topped with shredded cheese & sour cream! You could also cut a few tortillas into the bowl. :) Yummmmm

I make my chili in the crockpot so I can let it cook all day and not have to worry about forgetting to stir it. I usually put it on early in the morning to let it do it's thing.

1 lb ground beef or ground turkey
1 can tomato paste
1 can condensed tomato soup
1 pkg chili seasoning
1 can diced tomatoes (if you like heat, use the ones with diced chilis)
1 can diced chili ready tomatoes
1 can red beans or whatever kind of beans you like
1 can chili ready beans
hot sauce to taste
paprika to taste
cumin to taste

After I empty the cans, I fill one can with water to get out the rest of the goodiea and transfer to each can and then pour into the chili. I serve it with cornbread that I make with 2 boxes of Jiffy corn muffin mix, however nmany eggs it takes, and 1 can creamed corn instead of milk. It's a hit here at my house and my husband's firehouse. :)
